One of the best parts of summer is the fresh fruit. Fruit is just too good right now. I’m a big fan of grapefruit and peaches… but recently I’ve been seriously loving apricots. Truth is, I never really tried apricots before. Dried apricots, yes. But those are more like candy than fresh fruit. When we were visiting our friends Howie and Jana, their friend made these incredible appetizers with apricot. Well, I’ve been craving it ever since. (One night Garrett asked what I wanted from Seamless and I told him I wanted “Liz’s crostini” and he responded, “I don’t think she’s on Seamless yet.” Ha!)
While I’ve been trying to cook more, I don’t even know if this counts as a recipe. It’s super easy and is more like stacking things together!
The simplest of ingredients: Baguette, Ricotta, Apricots, and honey.
Really, that’s it.
Slice the baguette into 3/4″ rounds. Toast the rounds*. Spread a little bit of ricotta on each slice. Top with a sliver of apricot (or two!)** and then drizzle honey.
* I don’t have a toaster oven, so I popped them in the oven for about 12-15 minutes at 350.
** I like cutting a few extra apricots up to snack on!
Yum! I’ve been making these as a little mid-afternoon snack and as a side for dinner. It tastes how I imagine summer would taste. Savory from the bread and cheese, sweet with the apricot, and sticky from the honey. Delicious.

Sorry for the jump scare… but go ahead and add “great at multitasking” to my resume 😆 is it habit stacking or just survival mode? Every morning, I’ve been doing a red light session with my @omniluxled face mask, while listening to an audiobook, and I spend the 10 minutes tidying up. I make the beds, put laundry away, straighten up the boys’ toys… I always feel on top of the world and like I can do anything 😆
I’ve been hesitant to add new skincare products to my daily routine because I don’t want to disrupt my healthy skin… I tested @oakessentials skincare line though and it’s now a staple in my weekly routine. I’m using these three 2-3x a week (the night before hair wash days!) and my skin is SO moisturized and hydrated!!
(Why has no one been using this song for this trend? Literally all that I hear whenever I see another “ins and outs” trend 😆)
